I wrote this about a month ago, so all extra information is from that day. However, I thought I would share this recipe seen as I’m hoping to make a butter beer fudge next week and will be sharing that.


I was off again today due to seizures (It really hasn’t been my week), but this afternoon they finally stopped. I was so chuffed.
I planned on doing some writing but my brain didn’t really want to work, it was too busy being over electrified, (apparently I’m one of the few people with JM epilepsy who’s whole brain has electric shocks during seizures not just a small sections of it. My Neurologist even said this in an impressed voice, gee thanks, like I wanted it to be worse). Anyway, I decided to make some Fudge instead.
I always loved baking, but haven’t done it for ages, so decided to start with something pretty simple. Crockpot Vanilla Fudge.  😍


It was so simple, but takes quite a while and needs constant attention.

500g of chocolate (broken into chunks)
1tsp of vanilla essence
1tbs of unsalted butter
1 tin of sweetened condensed milk

Put it all in the slow cooker and turn it onto low. Cook for 2 hours, stirring it every 10-15 minutes.  Once cooked, pour into a lined baking tin and put in the fridge to cool.

Then, enjoy. See really simple 🙂

Think I will be more adventurous next time and try a more exciting Fudge, maybe caramel or coconut.
I’m looking forward to eating some tomorrow though, that’s for sure.
